Welcome to the new year! It’s been an amazing 2015 and I honestly can’t wait to see what 2016 has in store for all of us. Good things to come! Being just a few months old, I’ve spent the past few days reflecting on the past year and making decisions on the direction I would want to take the blog. My win was an amazing, humbling blessing and am looking forward to sharing my experience and adventures in this new year with you guys. I’ll also make a point of posting some of my most memorable recipes on Fuata Flava that you can try at home and hopefully get the gist of what we went through in the show.
I thought we’d kick off 2016 and transition into healthier eating with this easy to make, comforting fried rice recipe. I love how you can take regular plain rice and make it intensely flavored enough to taste complete with nothing lacking. For this recipe I wanted to go for simple ingredients so I added in a few vegetables; broccoli, carrots and sweet corn. You could also throw in some chicken,bacon or crumbled sausages if you want to add a meaty edge to the dish. It’s entirely up to you to give your rice your own personal touch and if done right you should have your protein,grain and vegetable all in one bowl! Here’s to healthy, happy eating in 2016! Cheers!
Ingredients:
- 3 cups cooked and chilled rice
- 1½ cups small broccoli florets
- ½ medium onion diced
- 1 cup diced carrots
- ¾ cup sweet corn
- 1 tbsp. minced ginger
- 3 cloves garlic, minced
- 1-2 tbsp. soy sauce
- Freshly cracked black pepper to taste
Preparation:
Heat oil in a large non-stick pan or wok over medium-high heat. Add carrots, onions, garlic and ginger and sauté 3 minutes. Add Broccoli and sauté until soft about 3-4 minutes.
Stir rice, corn and soy sauce and cook for about 2 minutes. Season with salt and black pepper to taste.
Serve warm!
