SAUTEED POTATOES

Potatoes make great accompaniments to chicken or fish dishes aside from being pretty straight forward to prepare. For this potato recipe it’s the simple flavors that do for me; the buttery taste, the slightly charred potatoes, the onions, garlic and coriander. It’s absolutely as delicious as it sounds!

You can fancy up the dish with additional ingredients you like; Bacon bits, crumbled sausages or your favorite cheese topping.

Ingredients:

  • 4 cups potatoes chopped into cubes
  • 3 tbsp. vegetable oil
  • 1 tbsp. butter
  • 1 onion
  • 2 cloves garlic
  • 1 tbsp. chopped parsley
  • Salt and pepper to taste

Preparation:

Slightly boil your potatoes for about 5-7 minutes then drain.

In a pan, heat the oil on medium high heat, add the potatoes and let it cook more turning often until tender and crispy.

Lower the heat and add butter, onions and garlic. Cook until they are soft and turning transparent. Sprinkle the chopped coriander leaves and season with salt and pepper to taste

Serve hot with roasted beef or chicken.
