It goes without saying that breakfast is the most important meal of the day but admittedly with my busy schedule lately I’ve been throwing that fact out the window. Sometimes all I want is a quick snack to munch on as I leave the house and when I stumbled upon these oatmeal breakfast bars I couldn’t be more elated! They’re loaded with whole, healthy ingredients and are incredibly satiating! They are also naturally sweetened with honey and raisins, so all the health conscious folk and my fellow sweet tooth friends out there alike are covered! Perfect power breakfast to kick-start your day!
Ingredients
Base
- 2 bananas
- 1½ cups oats
- ½ cup nuts
- ½ cup raisins
- ¼ cup milk
- 3 tbsp. honey
- ¼ tsp. salt
- 1 tbsp. vanilla yogurt
- ¼ tsp. vanilla essence
- 1½ tsp tsp. cinnamon
Topping
- ½cup oats
- 1 apple diced or sliced
- ¼ cup nuts
- ¼ cup milk
- ¼ tsp cinnamon
Preparation
For the base
Preheat your oven to 180°c.Line your baking dish with parchment paper and lightly grease with vegetables oil. Add all the ingredients in a food processor until completely combined. You could also use a wooden spoon to mash and mix the ingredients together. Pour into prepared dish and smooth it out with a spatula or your fingertips. Then bake for 10 minutes.
Topping
Put ingredients in a medium bowl and stir to combine.
Remove the baking dish from the oven and spread toppings evenly over and lightly press down into the base. sprinkle some desiccated coconut on top and bake for additional 15 minutes. Remove and let it cool. When it’s completely cooled cut into small bars.
