Matoke is an authentically African dish and am pretty sure most Kenyan households have prepared matoke once or twice this past year. We all love it!
For this recipe, I decided to tweak it a little by throwing in some sliced apples to add a sweat and fresh dimension to the dish. It’s simple and it will only take you half an hour to prepare the whole dish. You can serve it with a stew or sauce of your choice but for a fully vegetarian dish, a leafy salad would go perfectly with it.
Ingredients:
- 6 Matoke- Peeled and washed
- 2 apples
- 1 onion, diced
- 2 cloves garlic
- ¼ tsp. cumin seeds
- 1 tsp. curry powder
- ¼ tsp. turmeric
- 2 diced tomatoes
- chopped coriander.
- Salt and pepper to taste
Preparation:
In a pan add oil and cumin seeds and stir until fragrant (2minutes) add the onions and garlic and cook till softened. Add curry powder and turmeric, fry for 2 minutes then add tomatoes and let it cook (3-5 minutes)
Add 1 cup of water and bring to boil, lower the heat then carefully drop in the peeled matoke. Cover and let it cook till they are fork tender.
Add the apples and more hot water if required and let them cook for about 5 minutes. Sprinkle with coriander leaves.
