Well friends, with Christmas right around the corner, holiday meals are usually a bit over the top when it comes to vast array of menu items; and donâ€™t get me wrong am all for that. However, sometimes itâ€™s hard to actually eat all of that in one seatingâ€¦at least not without the repercussions of a major stomach upset. So perhaps it might be handy to have a lighter menu option somewhere between roasted chicken and the other 6 varieties of meatâ€¦.and thatâ€™s where this salad comes in. seriously lets observe a moment of silence to appreciate how gorgeous and vibrant and perfect this salad is, the color, the contacting textures, the sweet and tangy flavors, this recipe has it all!
Youâ€™re going to need a side dish for all those BBQ s youâ€™re planning to have and itâ€™s about time good old â€˜kachumbari â€˜Â got a side kick, donâ€™t you think?
- 4 cups broccoli florets
- Â¼ cup diced red onion
- Â½ cup raisings
- 2 apples, diced
- Â¾ cup mayonnaise
- 1 tbsp. white wine vinegar
- 1 tbsp. sugar
- Pinch of salt
- Pinch of bicarbonate of soda
- Â¼ cup cooked and chopped bacon.
Bring water to a boil; add a pinch of salt and bicarbonate. Add the broccoli and blanch until bright green and slightly softened about 2 minutes. Drain well, run under cold water or place it in ice water to stop the cooking, and drain again.
In a mixing bowl, combine the mayonnaise, vinegar, onion and sugar. Add the broccoli, bacon, apples and raisings and toss to coat.
Chill till ready to serve.
