Today I’ll be sharing the best banana nut bread recipe. I’ve been trying  quite a few bread recipes and I have finally nailed the perfect banana bread… which of course involves nuts to give it that crunch to counter the moist texture of the bread.

This is a definite crowd pleaser! It’s super soft, sweet and absolutely delicious aside from being really easy to bake. The hardest part is waiting for that whole hour for it to bake!

Pair this banana bread with a steamy cup of coffee on a cold morning and you’ll be in perfect bliss!

Ingredients:

  • 4 bananas
  • 2 eggs
  • 1 ½ cups of self-raising flour
  • ¾ cup sugar
  • 1 tsp. vanilla
  • ½ tsp. salt
  • ½ cup vegetable oil
  • ½ tsp. cinnamon
  • ¼ cup ground nuts

Preparation:

Preheat your oven to 180°c and grease one loaf pan and lightly dust it with flour.

Mix together the eggs, sugar, vegetable oil and vanilla in a mixing bowl whisk to a smooth mixture.

In a smaller bowl, mash your bananas together using a fork. You can puree them if you prefer, but I like to use fork because then you have lumps of banana scattered throughout your loaf. Fold in the mashed bananas into the egg, sugar mixture.

In a separate bowl, mix the flour, salt and cinnamon together then fold it in the above mixture. Try not to over mix.

Pour the mixture into the loaf pan, sprinkle the nuts over the top of the batter and slightly press in the nuts.

Bake for 45-60 minutes, use a tester or knife to check if it’s cooked internally.

Cool and remove from the loaf pan.
